Chef's Table
While the Brilliance of the Seas' Chef's Table comes with a hefty cover charge, it's one of those exclusive experiences that will stay with you forever. If you can afford this culinary treat, you'll enjoy it at a private dining table which seats a maximum of fourteen people.
The dinner is a five-course menu of gourmet dishes prepared by the night's featured chef, and carefully and expertly paired with the perfect companion fine wines. You will need to make a reservation and can join the other guests for a pre-dinner drink before sitting down to enjoy your feast of flavours.
The Minstrel
The Minstrel is the ship's main dining room, spanning decks four and five, with seating for up to 1,226 guests. It's a magnificent room with its own cascading waterfall feature and opens daily for breakfast, lunch and dinner. Lunch is not served while the ship is in port. Breakfast is served from 7:30 AM to 9:30 AM and lunch is between noon and 1:30 PM on deck four. There are two seatings for dinner, early being at 6 PM and late being at 8:30 PM.
Giovanni's
Giovanni's Table can be found portside on deck six. It opens daily for lunch and dinner and has a cover charge. It's a beautiful space with lots of natural light and serves some scrumptious Tuscan style Italian foods such as stews and braised meat dishes to pastas and salads. As this is a very popular restaurant, it's advised to make a reservation, especially if you want to join them for dinner.
Izumi
The Izumi bistro can be found on deck 12 and offers a la carte pricing. It serves some fantastic Asian dishes, which spans from very traditional to more modern fusion themed dishes. Expect really flavoursome fresh ingredients, especially with regards to the sushi and sashimi. They have some hot dishes available as well for those who aren't fans of sushi.
Park Cafe
The Park Cafe can be found midship on deck 11 and has an extremely relaxed atmosphere with a casual dress code. It's one of the few places you can dine at in your swimming costume and shorts after a dip in the pool. This deli style restaurant serves paninis, sandwiches, gourmet pastries and made to order salads.
Chops Grille
Chops Grille can be found on the Brilliance of the Seas' 6th deck and is a popular New York and Chicago Steakhouse, which charges a cover fee. Meat lovers will enjoy their grade-A premium cuts of steak, cooked just how you like it, whether you fancy blue or anything up to well done. They also have fresh sea food, some great side dishes, and some impressive signature desserts. The restaurant can seat up to 92 guests and opens for dinner daily from 6:30 PM to 10:00 PM.
Windjammer
The Windjammer buffet cafe can be found on deck eleven and has enough seats for 310 guests. There is a great selection of food stations on offer including Carvery, Asian Flavours, Seafood, Pasta, Vegetables and Salads, Daily Specials and Desserts. It also has a 24-hour coffee, tea and water station. If you'd like a sweet treat on the go, they have soft serve ice cream just outside Windjammers next to the pool.

If you prefer a more sedate and relaxed pre or post-dinner drink, you will like the Schooner Bar. Here, it's all about the music, with jazz and piano tunes being played every night. You'll find it outside the Anthem's theatre.

The Pacifica Theatre spans decks 4, 5, and six and can seat up to 900 guests. It's a spectacular room with the latest in cutting edge audio and visual technology. It is home to the Brilliance's production cast, the Royal Caribbean Singers and Dancers, who perform Broadway-style productions and cabaret. The theatre also has a host of other acts including singers and dancers, hypnotists and magicians.

The rock-climbing wall is an impressive 30-foot-high structure on deck 13. It has quite a few safety regulations but there are staff on hand to help new and less experience climbers. The wall has different routes suited of people with various degrees of experience and you can ring a bell of celebration when you make it to the top.
