Ruby Princess is a Princess Cruises vessel, which was built in 2008 by Fincantieri in Trieste, Italy. She is a Grand-class cruise ship and her sister ships are the Crown Princess and Emerald Princess. She was officially named at Fort Lauderdale, Florida in November 2008 by Trista and Ryan Sutter from The Bachelor fame.

Ruby Princess was the first to debut a new program called the Ultimate Ship Tour, where guests are given a behind-the-scenes look at what it takes to run the ship. Weight-wise she was the biggest ship in the Princess fleet before the Royal Princess took over the title. She is currently based in Los Angeles for cruises to the Mexican Riviera, Hawaii and California coastal cruises and will be based in Australia from 2019.

Michelangelo Main Dining Room

This flexible main dining room opens for dinner every day between 5:30 pm and 10 pm. It can be found on deck five at the Plaza and offers flexible anytime seating arrangements and you can get a table for two if you want a more intimate dining experience.

All of the main dining rooms offer the same 4 course dinner menu, where you can choose between the classics being served every night and the nightly themed dishes, which changes every day. Staples that are always available and really good are steaks, salmon and chicken breast meals.

Da Vinci

This formal dining room opens daily for breakfast, lunch, and dinner. It is on deck six and offers breakfast from 7.30 am and 9.30 am, afternoon tea from 3.30 pm to 4.30 pm and Princess' Anytime Seating option for dinner between 7.30 pm to 10 pm. Examples of lunch choices include hamburgers, chef's salad, roast beef sandwiches, tortilla soup, and fried catfish.

Botticelli

This formal dining room is one of three main dining rooms on board and it opens for dinner daily from 6 pm to 10:00 pm. It's the Ruby Princess' traditional dining room where you can eat dinner at the same table and time every night, early being at 6 pm and late being at 8:15 pm. Vegetarian options such as fettuccine alfredo aubergine lasagne and are also available along with healthy options offered by the Lotus Spa.

Sabatini's

This select Italian dining venue has a cover charge and opens daily for breakfast and dinner. You will find it on the sun deck (sixteen) where you can enjoy some fine dining with a view, although reservations are recommended. Breakfast is from 7:30 am to 10:30 am and it opens for dinner at between 6 pm and 11 pm. As well as their scrumptious Italian food, they also serve premium seafood on their a la carte menu.
